Control packages version in ubuntu

I use aws/ec2 to run my app in environment Linux/ubuntu and i need to control in all instances the version of all packages.

Example:

I need all my server run mysql.server-5.6.19-1~exp1ubuntu2 in this exact version. I need a way of automate this task, every time i deploy a new version to production env.
